Dover Sole is a type of flatfish of varying families. Like numerous other flatfishes, soles are flattened, more or less elongated fishes, with both small eyes on the right side of the head. Dover Sole is prized as a food fish of choice and can be caught all year round in Jersey. It is best cooked on the bone for flavour. Also the bones can be easily removed after cooking in one movement to reveal perfect tasting white flesh. I catch Lemon sole very occasionally in Jersey but it is not common.
Simply sprinkle some salt, pepper, olive oil and lemon juice onto the sole. Put it into the oven for 8 to 10 minutes, until the fish is white and flaky throughout. Serve with potato or chips and something green.
